  2. Sauté onions, bell peppers, and tomatoes until softened.
  3. In a mixing bowl, whisk the eggs, salt, pepper, and oregano.
  4. Add the sautéed vegetables, spinach, and cheese to the egg mixture.
  5. Pour the mixture into a greased Instant Pot container.
  6. Cook on high pressure for 10 minutes, then do a quick release.
  7. Serve hot and enjoy!
