Ingredients
- Cucumber, Raw, Without Peel (1-½ pound)
- Avocado Oil (¾ tablespoon)
- Pork Ribs, Country Style, Fresh, No Visible Fat Eaten (1-¾ pound)
- Garlic (3 clove)
- Salt, Sea Salt (¼ teaspoon)
- Black Pepper (¼ teaspoon)
- Fish Sauce (nam Pla Or Nuoc Mam) (2 tablespoon)
- Salt, Sea Salt (½ teaspoon)
Instructions
- Peel and slice the cucumbers in half lengthwise.
- Scoop out the seeds. The weight of the cucumbers in this recipe is without seeds. Then slice them in the other direction into ¼” thick U-shaped slices.
- Slice the country ribs very thin about ⅛” thickness.
- Heat a large pan over high heat and heat until very hot. Add the pork, then season with ¼ t sea salt and ¼ t black pepper. Leave undisturbed until they release easily from the pan and are browned on one side. Stir.
- Add garlic grated and stir into the pork. Add in 1 tablespoon of fish sauce. Stir until pork is almost cooked through.
- Add the cucumbers and cover with a lid for 5 minutes. Add in an additional 1 tablespoon of fish sauce and ½ t sea salt. Cook covered for another 5 minutes until cucumbers are slightly soft, but still crunchy. Serve hot with cauliflower rice and a big spoonful of the “juice” that is created at the bottom of the pan!
